The family and friends of Nick Apodaca are uniting to raise money to help with medical costs and related expenses not covered by insurance.

Last February a smiling charismatic woman by the name of Natalie Apodaca was hired at the reputable Arcadia neighborhood eatery, Chelsea’s Kitchen. In the short time she’s been apart of the CK crew, everyone from the staff, managers and first time restaurant guests have felt privileged to be graced by her infectious smile, hard working aesthetic, and beautiful energy. It’s safe to say that getting to know Natalie means basically falling in love with her. She is the person you meet and think, there is no way someone can be this consistently happy, though it doesn’t take long to know that genuine happiness just comes along with the Apodaca territory. Knowing her adoring husband Nick, only amplifies this fact, doubling our faith in people who are innately good and happy in love.
The two moved to Arizona last February for Nick’s job with Zoyo yogurt as a district manager. Zoyo plans to grow and position him in as many stores as possible within the next few years, while the couple planned to multiply even more love by starting a family--- a plan that now must be put on hold due to an unfair hand that life has dealt such a dynamic couple.
In May 2010 Nick and Natalie were working and living in London when Nick suffered multiple seizers. Rushing to the hospital, Nick underwent numerous tests, to find his seizures were the result of a brain tumor, its growth to be under strict monitor and close scrutiny. After moving back to the states, Nick and Natalie followed procedure only to find what they prayed they wouldn’t. Nick’s tumor had grown, meaning Nick would have to undergo brain surgery to remove the tumor. Terrified, the couples remained hopeful, the doctors said this kind of tumor is in the low percentile of having cancer. However, this was not the case and after having surgery on July 6, 2011 the pathology report showed cancer cells. Nick now has to follow through with radiation and chemotherapy for the next year. He has begun treatment and astounds us all with his positivity, charm and rockstar strength.
Nick and Natalie’s insurance requires them to pay a $20,000 deductible and then the insurance will only cover 50% of expenses after the deductible is met and then met again in 2012. Of course, this will create an enormous financial burden on their lives, while the emotional burden in their beautiful hearts and minds is enough for any of us to imagine.
Nick and Natalie Apodoca have touched our lives in a way that makes our understanding of the world more meaningful. Many of us have come together to find a way we can show our love and support by raising money for their expenses. We have decided to throw a fundraiser on November 9th, 2011 to give as much help and support to two overly deserving members of our community.
